Primitivo Collantes, 'Socaire' Vino de la Tierra de Cadiz 2022

The easiest way to describe this wine is that it is a fresh, bone dry, un-fortified, non-oxidative Sherry. So of course it isn't Sherry at all, but it is made from 100% Palomino like most Sherry, it is made in Xeres by a Sherry producer, and it is aged for 2 years in used Fino Sherry casks, that are topped up so no flor forms. Truth is it is very hard to describe in a few words, but if you like dry, salty, mineral, and slightly nutty white wines than this is sure to be your jam.
