Jean-Marc Pillot, Bourgogne Blanc 'Les Hauts des Champs' 2023

Sourced from a single vineyard of older vines that is on the southeastern edge of Chassagne. The Pillots now ferment and age this entirely in stainless still, where it spends 12 months aging on the fine lees before bottling. Fresh, exuberant, and loaded with crisp orchard fruits, lemon-lime zest, and saline minerals.
