Vincent Couche was the first producer in Champagne to become certified biodynamic by Demeter.  His dedication to the land is unparalleled in the region and he attributes a huge portion of that to freedom he feels being in Cotes des Bar, far south of the rest of the traditional center of Champagne. 

Elegance goes through full malo then aged 1 year in barrel and 2 years on the lees.  Unfined and unfiltered
